In this blog we'll talk about some easy and healthy campfire cooking recipes that everyone can use, whether you're a seasoned camper or a beginner.. I would love to see some photos of your culinary creations!

When it comes to camping, one of my most anticipated activities is cooking over a campfire. There's something incredibly satisfying about preparing meals in the great outdoors, surrounded by nature's beauty.


However, if you are like most people you have memories of campfire cooking involving roasting hotdogs, marshmallows and creating sweet sticky smores. While those are quite tasty, they really aren't healthy campfire cooking recipes and when you are camping you really need to eat healthy in order to have enough energy and vitality to do what you want to be able to do, like hiking for example. .

 


Foil Wrapped Veggie Medley:
This recipe is incredibly versatile and requires minimal preparation.

  1. Start by cutting your favorite vegetables into bite-sized pieces—think bell peppers, zucchini, carrots, and onions.
  2. Season them with olive oil, salt, pepper, and your choice of herbs.
  3. Wrap the seasoned veggies in a double layer of heavy-duty aluminum foil and place the packet directly on hot coals.
  4. Cook for about 15-20 minutes, flipping halfway through.

The result is a delicious and healthy veggie medley, packed with nutrients and flavors. You can also try potatoes, onions and carrots with an optional add in of asparagus or broccoli. I've also added chicken, bacon or a hamburger patty for extra flavor creating a more complete meal.

 

Grilled Chicken Skewers:
Grilled chicken skewers are a campfire classic, and they can be made healthier with a few simple changes.

  1. Marinate chicken breast chunks in a mixture of olive oil, lemon juice, garlic, and your preferred herbs and spices.
  2. Thread the marinated chicken onto skewers along with colorful vegetables like cherry tomatoes, bell peppers, and red onions.
  3. Grill the skewers over the campfire, turning them occasionally, until the chicken is cooked through.

  2. Cut the tops off bell peppers, remove the seeds, and stuff them with the cooked quinoa mixture.
  3. Wrap each stuffed pepper in aluminum foil and place them near the edge of the campfire for 25-30 minutes.
  4. The peppers will become tender, and the flavors will meld together, creating a satisfying and nutritious dish.

You can also use rice instead of quinoa. This one requires advance prep at home but is a really good and delicious option that everyone will be raving about.

 


Campfire Baked Apples:
End your camping day on a sweet note with these campfire baked apples. A classic that will treat everyone and get you lots of compliments. This is a much healthier option for smores. 

  1. Core apples and fill the cavity with a mixture of oats, honey, cinnamon, and chopped nuts. You can also add other chopped up fruit like pears, peaches, grapes or anything you love to bake with.
  2. Wrap each apple tightly in aluminum foil and place them on the hot coals.
  3. Allow them to cook for 20-30 minutes until the apples are tender and the filling is golden and caramelized.

These warm, naturally sweet treats are a delightful way to enjoy a healthier dessert option while camping, hiking or just a day in nature.

In this blog we'll discover the 6 Surprising Energy Drainers That May Be Causing Your Fatigue.  With the stressors of surviving life these days, its even more important to pay attention to what gives you energy and what is taking it.  Having a lack of energy can lead to depression, anger issues and developing health problems. 

Sometimes, we can do everything right to manage our energy—getting quality sleep, staying hydrated, making time to rest—and still end up feeling exhausted. If you constantly feel drained, talk to your doctor to find out if an underlying health issue is the cause.

Pushing Back Bedtime
Often, the very end of the day is the only slice of free time we can find in our busy days to do what we want to do rather than all the things we have to do for others. This phenomenon is known as “revenge bedtime procrastination.”

Over time, swapping bedtime for "me time" can lead to chronic sleep deprivation and kick off a vicious cycle of fatigue.

Conferencing apps like Zoom and Teams are quickly becoming a mainstay of work life. While meetings are a workplace essential, back-to-back meetings—even virtual ones—can be tiring.

While many people joke about experiencing Zoom fatigue, this is an all-to-real phenomenon. A Stanford University study suggests that the presence of multiple nonverbal cues increases fatigue during video conferencing meetings.

To beat Zoom fatigue, try turning off your self-view during meetings. You can also limit the number of video meetings you have in a day and allow sufficient breaks between meetings.

Too Many Decisions
Every time we make a decision, our brains need to process information, weigh options, and evaluate outcomes. Over time, this can deplete our mental resources, leaving us exhausted and overwhelmed. Decision fatigue can also lead to indecision or procrastination, as we may become paralyzed by the fear of making the wrong choice.

To combat decision fatigue, Raja says, “Simplify your choices whenever possible and delegate decision-making to others.” You can also try streamlining routine decisions, such as what to wear or eat, and prioritize the most important decisions when your mental energy is highest.
